Words cannot describe how amazing these are. I’m not bragging I promise! I genuinely think they are even better than my healthy brownies! I had been playing around with madjool dates to try and come up with something a little more fun than my anti-aging power bites, don’t get me wrong they are amazing but I think if you have anything every week you will eventually get bored and so these glorious squares were born. Being bored has never tasted sooooooo gooooooooddd!!!!
So I know what you must be thinking! These can’t possibly be healthy. I’m not going to tell you they are as good for you as eating a kale salad cause they’re not! But….. they are about as good for you as a healthy dessert can get and they taste just as good as the real deal if not better! Plus they are loaded with loads of vitamin E, which is good for the skin, hair and eyes as well as loaded with healthy fats from both the nuts and coconut oil! Wooohoooo go wild!
INGREDIENTS
BASE:
1 Cup Almonds
1 Cup Cashew Nuts
½- ¾ Cup Medjool Dates (Depends On How Sticky They Are!)
2 Tbsps. Coconut Oil
CARAMEL:
2 Cups Medjool Dates
¾ Cup Cashew Butter
2 Tbsps. Coconut Oil
2 Tbsps. Maple Syrup
½ Cup Water
1 Tsp. Salt
1 Tsp. Vanilla
TOP LAYER:
300g Raw Chocolate or 70% Dark Chocolate
Pop the almonds and cashew nuts into a food processor and whizz for a couple of seconds to break them up.
Next add the dates and coconut oil, whizz again until a dough-like consistency forms. Smoosh the nutty mixture into a parchment lined tray or tin, what eves just get it in!!!! Oh and then pop in the freezer! It makes the next step much easier!
Yay! On to my favourite bit, lets make the caramel!! Wooohoooooo ……. Pop the dates, salt, vanilla, cashew butter, coconut oil, maple syrup and water into the food processor and whizz for about 2 minutes until gooey and caramelly!!
Spread the ooey gooey-ness all over the base and then pop it back in the freezer. For best results freeze for 1 hour.
Lastly pour your choice of chocolate over the caramel and sprinkle with sea salt to decorate. Let set in the freezer and slice into whatever shapes and sizes your heart desires. Just try not to eat it all in one sitting!
