HOMEMADE BAKED BEANS

This is such a lovely warm and cozy dish! I love it for breakfast, lunch, Brunch or dinner. It’s one of those meals that is acceptable for anytime of the day and by golly is it good! But best of all its super quick and healthy! Woohoooo!! Look at us being super cool!

Cannellini beans provide more protein than most other plant-derived foods. They’re a good source of carbohydrate; provide B-complex vitamins, iron, potassium, zinc, and other essential minerals. They are also high in soluble fibre, low in calories and fat AND are a Low GI food. Wow…… Way to go Cannellini beans! Who knew?! Now get these little super hero’s into you quick!

Baked Beans 1

INGREDIENTS

Serves 2 Generously

1 Tin Organic Cannellini beans

1 Tin Plum tomatoes

1 Garlic Clove crushed

1 Large Onion chopped

1 Tsp. Cashew butter

1 Tbsp. Tomato puree

4 Slices Bread (I used Gluten Free here but you can use whatever you like!)

A touch of oil for sautéing the onion and garlic

Grab your weapon of choice… I personally like a saucepan for this but whateves! Add the oil, onion and garlic. Sautee until lightly browned.

Once sautéed (ooohhh look at you, you fancy little French chef!) add the tin of plum tomatoes, Cannellini beans & tomato puree, let simmer for about 3 minutes. While your waiting you can pop your bread into the toaster.

Nearly there! Now add the cashew butter (this is like adding cream, it makes it super creamy and luxurious but is better for you!) Season to taste with salt & pepper and serve on toast. There you have it, Home Made Baked Beans on Toast.
