Oooooooohhh I love pesto! Any kind for that matter. I love it on toast, in a sandwich, on pasta, as part of a salad dressing, stirred through hummus the list is endless!! It’s just AMAZING 😝
Anyhoo, over the years I have created this bad boy, half through love of pesto and half through necessity, as I didn’t want to fork out my hard earned mullah for a mediocre pesto that has crap added to it that I cant even pronounce! Ok rant over, this is so quick and easy, if you blinked you would miss this recipe!
Makes 1 Jar
1 cup Sundried tomatoes
¾ cup Extra virgin olive oil (best quality)
½ cup Cashew nuts
3 tbsp. Balsamic vinegar
3 Garlic cloves
2 tsp. Black pepper
1 tsp. Salt
3 Sprigs basil
Place all of the above in the food processor, blend to you’re favourite beat and do your best Italian impression ( Heyyy Pesto!) because you my friend have just nailed the most awesome pesto.
