Oooooooooooooooh baby! This is without doubt my favourite porridge of all timeā¦. And thatās saying something! You may remember in my last post I gave you a little recipe for Vanilla Cashew Butter? Well that was no coincidence my dear! Oh no, you cannot have one without the other! In case you didnāt see it, you can if you click HERE. So here it is in all its glory, the best porridge you will ever meet. Itās Rich and Creamy without being overly sweet and loved by adults and children alike! The best part about this recipe is that itās so quick and easy to make and all the ingredients are in season, which makes it super cheap! For instance I get my cherries and peaches in Lidl. Swag!
In terms of health well this porridge has the usual health benefits: boosts energy, protects skin, supports weight loss, helps to prevent diabetes, boosts heart health and reduces the chance of colon cancer. Wuuuhhhhaaaayyy Porridge! AND THEN when you top it with beautiful, seasonal produce like peaches and cherries you are also getting minerals such as calcium, potassium, magnesium, iron, manganese, phosphorous, zinc, and copper. If that wasnāt enough Peaches are also low in calories, contain no saturated fat or cholesterol and are a good source of dietary fiber. BOOOYAKASHA!!!!
Also, want some fun facts on Cherries?… Well youāre gonna get them anyway! Studies have shown that Cherries help with: Antioxidant Protection, Cancer-Preventive Compounds, Reduction in Inflammation and Risk of Gout, Support Healthy Sleep (Melatonin), Arthritis Pain Relief, Reduction in Belly Fat (I need this one), Reduction in Post-Exercise Muscle Pain (and this one!) and Lower Risk of Stroke. I donāt know about you, I mean I donāt really need a reason to eat cherries but sweet baby Jesus Iāll be eating even more of them now!
Serves 2 Generously
INGREDIENTS
1 Cup Oats (Iāve started using steel cut oats which are soooo yummy and give a slower release of energy)
2 Cups Water (if using steel cut oats add 1 cup of water extra)
½ tsp. Vanilla Powder or Vanilla Extract again NEVER use essence as youāre just paying for the smell of the product!
2 Flat White Peaches
¾ cup Cherries
1 tbsp. Vanilla Cashew Butter
1 Banana (optional)
Pinch of pink Himalayan salt
Lots and lots of love!!
So before we begin lets talk Vanilla powder. I know you may be thinking, āWhat the hell is thatā well my friend, vanilla powder is simply ground vanilla beans. Thatās it! Nothing else. You see vanilla extract will usually have sugar and alcohol added to them to make them a liquid which is fine but if youāre trying to cut out processed foods then vanilla bean powder is the purest form. Itās not cheap mind you! Its approx. ā¬12 a bag from Nua Naturals but I have to say it is totally worth it! And it lasts forever. I would go through maybe 1 bag every 6 months so for me itās totally worth it but otherwise the vanilla extract is just as good!
Now for the Porridge!
This step is totally up to you but I find it easiest to pop my oats, water and vanilla into a pot before I go to bed and leave them to soak over night. This way they take only a minute or two to cook in the morning when I donāt have a lot of time. But in any case feel free to do it in the morning. Itāll only take a couple more minutes.
So, cook your oats and vanilla by brining the porridge to the boil and let simmer for two minutes until all the water has been absorbed and the porridge is thick and smells like ice cream! (Thatāll be the vanilla)
Once cooked set aside and chop your fruit! I find the easiest way to cut peaches and cherries is to run my knife down the middle of the fruit until you hit the stone and repeat on the other side. In basic terms place your knife on the fruit, push down until you hit the stone in the middle and then roll the knife forward so that it turns the fruit over whilst cutting. I then repeat this step so that I have little segments of fruit. I.e. cut the fruit in half, then quarters and then eights so the stone comes right off the little segments.
Another easier alternative is to use a paperclip like in this video!
So once your fruit is all chopped, add to your porridge with the Vanilla Cashew Butter and serve. Breakfast has never tasted so good! Enjoy my lovelies. I know I most certainly will! xxxxx
