Happy Valentines Day everyone!! ❤️❤️❤️ Don’t worry I haven’t lost all my marbles just yet! This recipe was meant for yesterday however the little man was sick (Poor Baba!) which ended in a trip to the hospital so alas it is late! Apologies!

So back to the recipe! I created this pretty little cake for you my darlings! It’s super light and fluffy and unbelievably good and yes, it is actually on the healthier side of things, my valentine’s gift to you! I hope you love it as much as we do! Oh and by the by this recipe is good for any occasion or time of day! It has made quite the yummy breakfast on days when I’m short on time or just feeling like something quite indulgent! So there you are, you may have your cake and eat it too!😏

So let’s get down to the nitty gritty! I have made this cake as a vegan cake and I have made as a healthier gluten free cake. To be perfectly honest I think they are both amazing however I would make the non vegan version more as I’m ok with eggs but if you’re not then obviously the vegan version is for you! There’s nothing really bad in this cake. It’s just a load of good ingredients thrown together to produce something wonderful! So enjoy this my darlings and give yourself some much earned love! ❤️❤️❤️

Makes 1 cake or 24 small buns

INGREDIENTS

1 Cup Oats

1 Cup Ground Almonds

½ Cup Buckwheat Flour

1 Tsp. Baking Powder

1 Tsp. Baking Soda

½ Tsp. Vanilla

½ Tsp. Salt

½ Cup Maple Syrup

Zest Of 2 Clementine’s

3 Eggs (Or 4 Tbsp. Chia Seeds and 8 Tbsps. Water For The Vegan Version to make “Chia Eggs”)

1 Cup Natural Organic Yoghurt (or 1 Cup Coconut Yoghurt For The Vegan Version)

1 Cup Berries (Any You Like At All! I Used Mixed Frozen Berries!)

3 Tbsp. Chia Seeds (Don’t Add If You Are Making The Vegan Version)

¼ Cup Coconut Oil

 

First rule of fight club………… Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.

 

Ok let’s get to it! Place the oats into the blender and whizz until you have something that resembles flour. I know I’ve said this before but the Nutribullet has a really cool milling blade which is perfect for this but if you don’t have one that’s totally cool too, just pop it in a blender or go old school on it with two rocks! Yabba Dabba Doo!! 😜

Once you have managed the art of oat flour add it to the remaining dry ingredients.

 

Next add the eggs (or chia eggs for the vegan version) to the maple syrup along with the vanilla, clementine zest and yoghurt. Mix well and prepare to engage!!

Here we go, this is it….Add the liquid to the dry ingredients in a bowl and mix. Lastly add your berries of choice.

Now the fun part! I used a silicone mould in the shape of a rose that I bought in Lidl for €4. You can use any silicone mould or cake tins just make sure you rub it them with coconut oil first! Seriously go mental and have some fun with it! No matter what you put it in it will look pretty!😍😍

Once you have chosen your tin or mould of choice pop the cake into the oven on the middle shelf for 50-60 minutes. If you made small buns instead of a cake then they should take approx. 20 mins. You’ll know they’re ready when a knife into the centre of the cake and the knife comes out clean and they look beautifully golden!😍

I like to serve this with coconut yoghurt and berries or for the non vegan version I love whipped cream with some natural yoghurt added to it and lots of lovely fresh berries! So there it is! My orange, almond and berry cake!😍
