This, my friends is the answer to all your problems! If you have kids that just refuse to eat veggies or even if it’s for yourself and you’re trying to up your intake of veg or even if you just like Bolognese, this is the one for you. It is super simple and ohhhhhhhh soooooo gooood!!!! I make this every single week for the little man as he looooves it and seriously has no idea that there is any veg in here, let alone tomatoes! Mwahahahhahahah!!! Delighted.com. Honestly though it’s a sure way of getting some good stuff into him with out a fight and its super nice so we get to eat it too! WINNING!!!! I make this for spaghetti Bolognese, sloppy Joes, lasagne & ravioli. I like to make a big batch and then freeze it in portions so I always have some to hand when we have the little fella so this recipe might seem large but you can easily half it!

So lets get down to the good stuff! Well first off tomatoes and the carrots provide an excellent amount of vitamin C and beta-carotene, manganese and vitamin E, which is super great for your skin. The courgette and the leeks provide us with some lovely b vitamins, the onion and the celery provides us with incredible immune support and the beef ads a serious pack of protein and Iron. Basically it’s a very delicious balanced meal! Wohoooo go team!!

Serves 8-10

2 Packets Of Organic Mince Meat Approx. 700g

4 Red Roasted Peppers (I By The Jarred Ones In Lidl!)

2 Carrots

1 Courgette

1 Leek

2 Onions

3 Cloves Of Garlic

2 Stalks Of Celery

Tin Plum Tomatoes

500ml Pasta

2 Tbsps. Tomato Puree

2 Stalks Rosemary

Small Handful Of Basil

First things first, stick all of the above except for the rosemary and the mince into a food processor, yep that right, no chopping! Well I mean you can if you want to but its sooooo much easier to just feck it all in!

Next in a frying pan cook the mince and the rosemary together until browned and fully cooked! Approx. 10 mins then add to the veg puree thingy!

I am gonna make you’re life super duper easy. This is gonna take some time, not your time, you get to do whatever you like! You can go to the gym, watch an entire season on Netflix! Put it on before you go to bed or before you go to work…. Whatever you fancy…. Because we’re not going to do the work…….. your slow cooker is!!!!

Oh yes! That’s right, chuck the whole lot into your slow cooker and turn it onto hot/high and leave to cook for 4-6 hours. 4 is ok, 6 is best 8 is amaze balls!! But hey it’s up to you, whatever you have time for! And if you don’t have a slow cooker then just put it into a pot on a low heat for the same amount of time!

That’s it my lovelies. Just let it cook away and you are left with the BEST Bolognese you have ever had.

You’re so welcome! xxxx
