Did someone say Vegan, Gluten free, Dairy free and Refined sugar free delicious cookies???? Mmmmh yes I think so! These chocolate covered cookies hit the spot and this is coming from a seriously devoted chocolate hobnob fan. They’re beautifully crunchy and sweet. I’m not kidding they do not taste healthy they taste super bold! So come on lets get naughty peeps!
Ok well not actually naughty cause they’re not actually bad for you so we’ll just have to pretend because they’re actually full of goodness! NO honestly they are. Ok they might still be a sweet treat but they’re made with oats and coconut oil which means they’re full of healthy fats, complex carbohydrates and fibre! BRING IT ON!
Serves one hobnob fan or a couple of normal people!!
INGREDIENTS:
3 Cups Oats
1 Cup Ground Almonds
½ Cup Buckwheat Flour
½ Cup Coconut Oil
½ Cup Maple Syrup
1Tsp. Salt
2 Cups Chocolate or 2 Cups of my Raw Chocolate if you want to keep them vegan (Just use maple syrup instead of the honey)
First rule of fight club………… Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.
Put all of the above ingredients into a bowl except the chocolate and mix.
Once you have a fun sticky dough made, roll the dough into even sized balls and flatten out on a grease proof lined baking sheet.
Pop them in the oven for 20 minutes or until slightly golden and crunchy. Once cooked leave them to cool while we get on to the chocolate.
Melt the chocolate in a double boiler or in the microwave. Once melted, spoon over the cooled crunchie oaties. Try and wait even five minutes before you devour them…… just try!
