Ok guys, I’m not gonna lie. This one is seriously addictive! Is it healthy hmmmm not necessarily. Well I wouldn’t have it everyday, but every weekend, you betcha! That’s why the weekend was invented, so that everyone could participate in a warm and fuzzy past time that we call brunch! God I love a good Brunch!!! I would 100% have brunch with a side of dessert for my last meal (I’m thinking this French toast and a side of banoffi) Hey! Don’t judge!
Anyway back to the French toast! As I’m sure you can probably tell I loooove French toast however my waistline doesn’t seem to have the same appreciation for it. Sooo I created this little gem for peace of mind! Its gluten free and dairy free as well as being beautifully balanced in proteins AND carbohydrates with some punchy superfruits bursting with antioxidants and flavour (GETT INNNNN!!). But as always feel free to make it as healthy or unhealthy as you like! 😇 😈
Serves 2 generously!
INGREDIENTS:
4 Slices Gluten Free bread
1 Cup. Milk (I used almond milk here but any milk you like!)
2 Eggs
OPTIONAL TOPPINGS/ EXTRAS:
1 Tsp. Cinnamon
4 Strips of Smokey bacon
Mixed berries
Maple syrup
1 Tsp. Oil for frying
Ok first rule of fight club… (if you’re using bacon) preheat the oven to 180 degrees Celsius. Place the bacon on a wire rack and in the oven for about 10 minutes until deliciously crispy.
Whisk the eggs, milk and cinnamon (if using) together in a shallow dish. Once mixed, dunk the bread into the egg mix until totally covered. Yep your gonna get messy so just accept and enjoy! 😝
Once you’ve finished playing with the bread in the egg mix (such a Messer! 😜 ) place the bread into a lightly oiled heated frying pan. Sizzle on both sides to perfection (Approx 2 mins but who’s counting!)
Assemble your edible tower of joy. I personally like berries, bacon and maple syrup but sure feck it! Go wild and top with whatever you fancy. Enjoy you little Brunchmaster! 😎
