CHOCOLATE EASTER NESTS 🐣

Hey there, gorgeous! Wanna have some healthy Easter fun?! Well then these are just the ticket! Super simple, quick, easy, TASTY and fun. Oh yeah and they are soooooooo much better for you than any crap you can buy in a store.

   

These take less than 10 minutes to make and are a great way to get into the fun festivities of Easter. Plus if you have kids or other halves that you want to distract or entertain they’re good for that too!

 

The best part about these little cuties is that they are made from quinoa, rice and raw cacao powder…… I mean could we get any better?!! 😇 Ha ha ha I think not! And they honestly taste out of this world!! Trust me, my Fiancé does not like quinoa but boy did he like these!

  

 Makes 4 nests

INGREDIENTS:

1 Cup Puffed Rice (You Can Buy This In Any Health Food Store In The Cereal Section)

1 Cup Popped Quinoa Rice Again (You Can Buy This In Any Health Food Store In The Cereal Section)

2 Tbsps. Raw Cacao Powder

1 Tbsp. Coconut Oil

1 Tbsp. Raw Cacao Butter

2 Tbsps. Honey/ Maple Syrup

1 Tsp. Lucuma Powder

¼ Tsp. Salt

 

Raw Caramel (Optional)

4 Medjool Dates

1 Tbsp. Cashew Butter

2 Tbsp. Hot Water

Blend or bash together until you have a smooth paste

It doesn’t get easier than this folks.

 

Pop your raw cacao butter, coconut oil and honey or maple syrup into a bowl and place it over a pot of boiling water. Leave to melt (approx. 2 mins)

   

Once the mixture has melted add the cacao powder, salt and lucuma powder and mix well. Hey hey! You just made chocolate! Well done you!

   

Ok next, if using… totally optional but well worth it in my opinion, add the raw caramel to the chocolate.

   

Now pour the luscious chocolaty caramel over the quinoa and puffed rice, mix well. ps you could use just popped quinoa or just puffed rice! I used both because I had them but you don’t have too!

The last and most fun step is to grab a quarter of the mixture into one hand and roll it in your palms, into a ball, then pop it on the counter and push your thumb into the centre. You should now have something that resembles a nest! Wohoooo look at you you little chocolatier!

   

Decorate however you please. I bought these fun little decoration for €1.50 in Tesco! Not too shabby. Happy Easter Everyone! Mucho Love xxxxx
