Holy moly these are amazeballs! I started making these as a fun way to get some protein into me after the occasional gym sesh-chaun! Lets not get carried away now, I’m not one of those people that gets excited at the idea of going for a run! No no I’d be more inclined to run to the fridge than anything else! But in my quest for health I have to admit that yes I joined the gym and it’s not that bad! Shock! Horror! I know but there you have it! Soooo after a good work out I found that my body was sore in places I didn’t think you could be sore! That’s when I started making these and then I started making excuses to eat them cause they are seriously unreal!!! Honest to god, my Fiancé thinks they taste like healthy Ferrero Roche! I eat these after the gym, as a healthy snack or if I want something sweet with a cup of tea! They last for about 3 weeks in the fridge and travel very well in your bag!

It may seem like there are a lot of ingredients in these but you can put as much or as little as you like into them! I throw everything but the kitchen sink into them as I want to get as much goodness into me as physically possible but just dates, nuts and chia seeds would be great too!

 

The reason these are called Raw Energy Balls because they are raw obviously but also because the are so jam packed with whole food nutritional goodness that it is honestly ridiculous! These beauties supply your body with more antioxidants, protein, vitamins and minerals than any protein powder ever could. Plus they are sooooo much nicer and cheaper.

Makes approx. 15-20 balls depending on the size.

INGREDIENTS

¾ cup Almonds

¾ cup Walnuts

2½ cups Medjool Dates ( with the stone removed)

2 tbsps. Coconut Oil

2 tbsps. Chia Seeds

2 tbsps. Flax Seeds

2 tbsps. Raw Cacao Nibs

2 tbsps. Nut Butter (I used my triple nut butter but you can use whatever you like!)

1 tbsp. Hemp Protein Powder

2 tbsps. Raw Cacao Powder

¼ cup Sunflower Seeds

¼ cup Pumpkin Seeds

 

Throw all the nuts and seeds into the food processor and blitz for about 30 seconds until they look something like bread crumbs.

Next whack the remaining ingredients in and blitz until all is combined!

The mix should stick together well when mushed in your hands. If it doesn’t, add a couple more dates or another spoon of coconut oil.

This is the fun part, we’re gonna get our hands dirty!!! Grab some of the sticky rubble and mush it in your hand so that it sticks together and then roll it into a ball. Repeat until all the mix has been used! I like to make different sized balls in case I just want something small and sweet and bigger ones for after the gym.

That’s it my lovelies. Store them in a zip lock bag or lunch box in the fridge for up to 3 weeks!
