Ok lads donāt freak out! Yes I just used the kale word! I know I know itās probably the scariest green veggie out there! ! Itās so scary that the boogie man is scared of it! But not anymore! And Iām gonna tell you whyā¦ā¦. This is by far the best dish I have ever had that has kale in it, no joke it is scrumdiddlyumshious! And its super duper easy to make, promise!
Ā So why do we have to eat kale?! Well first off you donāt have to do anything you donāt want to do, but just do me one favour, try this one and if you donāt like it then you never have to have it ever again! Fair?
Ok down to the serious stuff, kale, as scary as it may seem, acts like a super hero in your bodyā¦. Yep thatās right, its super kale! Why you may ask? Wellā¦ā¦ I know I said this before but the vitamins in just the one cup of kale can trump a whole weekās worth of other foods as it contains 684% of the daily value of vitamin K, 206% of the suggested daily amount of vitamin A, and 134% of vitamin C. HOT DAMN! Kale is so amazing that Chuck Norris eats kale for breakfast!!
INGREDIENTS
2 Cups Kale
3 Red Onions
100g Creamy/ Crumbly Goats Cheese ( I like Ryefield or Five Mile Town)
2 Tbsps. Olive Oil
Spelt or Brown Rice Pasta
All righty! First things firstā¦. Chop the red onions into strips and throw them into the frying pan with the olive oil. Turn the heat on half way and leave to cook slowly and caramelize for 15 minutes. Stir occasionally, if they look like theyāre burning then throw a little water on there, not too much, just a little. Low and slow baby, low and slow.
Ā So while the onions are cooking boil the kettle and get your pasta on! Throw the kale into the onions and cook for a further 5 minutes.
Once all is cooked, throw the pasta into the red onions and kale and then sprinkle with the creamy crumble goats cheese. Oh baby this is gonna be good! Season with salt and pepper and serve!
