It’s loaded with beta carotene, Vitamin E, Thiamin, Niacin, Vitamin B6, Folate, Calcium and Magnesium and is an excellent source of Vitamin A, Vitamin C, Potassium and Manganese. Also the kale adds a healthy dose of Iron! Good lord get it into you quick!

Next put everything into a pot except for the cashew butter and the kale. Pop a lid on it and bring to the boil. Leave to simmer for 20 minutes.

After 20 minutes grab a hand blender and blend the soup until you have your desired texture. I personally like it quite chunky but it’s totally up to you. Next add the cashew butter and kale and leave it to cook for a further 5 minutes just until the kale has softened.
