Well this one certainly packs a punch! It’s kind of in between a soup and a meal, that’s why I called it a chowder! It’s so so good! It’s super warming and filling which is exactly what you need when its cold outside AND its super good for you!
So lets talk about the good stuff. If I eat this what exactly am I putting into my body?! Well this little baby is a powerhouse of nutrition! It’s loaded with beta carotene, Vitamin E, Thiamin, Niacin, Vitamin B6, Folate, Calcium and Magnesium and is an excellent source of Vitamin A, Vitamin C, Potassium and Manganese. Also the kale adds a healthy dose of Iron! Good lord get it into you quick!
Serves 6
INGREDIENTS:
3 Carrots
1 Large Sweet Potato Or 3 Small Ones
½ Butternut Squash
3 Cups Sweet Corn
3 Cups Kale
3 Stalks Celery
1 Stock Cube
3 Cups Cashew Milk
½ Litre Water
2 Tbsps. Cashew Butter
1 Onion
Fresh Thyme
Salt & Pepper
First things first, place all veg into a food processor with a grating attachment or blend or chop! Whichever you feel more comfortable with you go for it! It just needs to be small-ish!
Next put everything into a pot except for the cashew butter and the kale. Pop a lid on it and bring to the boil. Leave to simmer for 20 minutes.
After 20 minutes grab a hand blender and blend the soup until you have your desired texture. I personally like it quite chunky but it’s totally up to you. Next add the cashew butter and kale and leave it to cook for a further 5 minutes just until the kale has softened.
Serve in big bowls with crunchy sourdough bread and olive oil.
I love corn, but I have not developed a love for kale…so this will be a great recipe for me to try…it sounds delicious!
