This is by far one of the things that I make most. We have it for brekkie, on the weekends and for dinner during the week if I’m working a late shift or just too damn tired! It takes less then 10 minutes from start to finish and is UNBELIEVABLY delicious! Plus it’s cheap as chips to make and is obviously so much better for you than chips! Also it makes a really great meal post workout due to the protein and healthy fat content! BONUS!!!
So apart from being delectable tasty, lets talk about the nutritional benefits! When it comes to good sources of protein it doesn’t come much better than Mr egg! Eggs are a HBV (high biological value) protein meaning that they are kings in the protein world but the whites are also rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. GO ON YOU GOOD THING!
This recipe serves one … I mean it you can’t share! Or at least you won’t want too!
2 Slices Of Bread (I Like Rye Sourdough but go with whatever makes you happy!)
2 Tbsps. Sundried Tomato Pesto
Salt & Pepper
This is actually so easy it’s embarrassing! Ok so lets start with the eggs….
Now again, this is the part where everyone freaks out but don’t because it really could not be easier I promise! Boil water in a sauce pan until furiously boiling for 1 minute, remove from the heat and then crack your eggs in, do nothing else (ok maybe pop the bread in the toaster but that’s it!), leave them to sit off the heat for 4-5 minutes and guess what? When you go back to them…. You have poached eggs!! Woohoo look at you! Master of the eggiverse! Dun Dun Duuuunn!!(sorry I couldn’t leave it out! Too funny!) Next we feed world hunger! Ok maybe just your hunger for now…. God I crack myself up! Budump bump pshhhhh!! Ha ha ha ok enough now, moving on…
So while you are letting the eggs sit in their lovely warm bath, spread the sundried tomato pesto generously onto your toast. Then cut the avocado into slices and place adoringly on top.
By this time it will be about 4 or 5 mins in so you can now remove your eggs from the water and place atop your avo toast. Just a quick note, if you are making more than two poached eggs, say four, then you will need to put the pot back on the heat after the 4-5 minutes for approx 2 minutes or leave them off the heat for about 12 minutes! The choice as always is yours!
Lastly sprinkle with salt and pepper and devour! Or if you’re being really naughty grate some cheese on top! nom nom nom!!!!

One last little note! If you are giving these to kiddies I find that the easiest and most fun way for them is if you mash the avocado and poached eggs in a cup and then cut the toast with the sundried tomato pesto on it into soldiers. That way they can dip their toast in and everyone’s happy!
