This GEM of a recipe was originally given to me by my soon to be sister in law. She makes them for her kids all the time and they are DELICIOUS!!! ❤ Sooooo naturally I asked her for the recipe and changed a few things around to make them super-duper healthy and super-duper easy! And my God are they good! I literally make them every second week and I am always asked for the recipe so it seems only fair that I pass it on as it was passed on to me!!
You might be wondering why they’re called mighty muffins? Well, these super little dudes are filled with Protein, Fibre, Carbohydrates and healthy fats and are probably the best damn healthy muffin in the world!! They are perfect for breakfast, brunch, as a gift, a snack or even a dessert. I’m not gonna lie I don’t need any excuse to eat them cause they’re UNREAL!! 😛
Makes approx. 15 small or 12 large and they keep for up to 5 days in the fridge.
INGREDIENTS:
2 ½ Cup Oats
1 Cup Natural Organic Yoghurt (Coconut Yoghurt if you want it dairy free!)
2 Eggs
½ Cup Honey
2 Tsp. Baking Powder
1 Tsp. Baking Soda
2 Tbsp. Ground Flax Seed
1 Tsp. Vanilla
2 Ripe Bananas
OPTIONAL TOPPINGS:
Chocolate Chips & Pecans, Raspberries, Strawberries, Blueberries, JUST GO WILD!!!!!
First rule of fight club………… Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.
In a blender (I use a NutriBullet, its like my right arm I would be lost without it!) Blitz the bananas, yoghurt, eggs, honey and vanilla until you have a beautiful smoothie looking thing, just make sure you don’t leave it around for long in case someone thinks it’s a smoothie and tries to drink it. No joke this happened!!! 😱
Moving on, place the oats into the blender and whizz until you have something that resembles flour. The Nutribullet has a really cool milling blade which is perfect for this but if you don’t have one that’s totally cool too, just pop it in a blender or go old school on it with two rocks! Yaba Daba Doo!! 😜
Add the liquid to the dry ingredients in a bowl and mix. Now the fun part! Grab a baking tray and line with the funkiest paper cases you can find. Fill the cases up ¾ of the way and then top with whatever you want! Seriously go mental and have some fun with it! You could even make these savoury by taking the honey out and whacking in some cheese and bacon!
Pop into the oven (middle shelf) for approx. 20 mins. How easy is that? Like I said, UNREAL! Enjoy you little Master Baker 😘

Hi Ann, thats a great question, to be honest I don’t know how well it would work as you need a blender to turn the oats into a flour?! if you had some way of grinding them down with out one then absolutely it would work, but that would be my only concern! let me know how you get on! xxx
